Valentine Day Fudge

This year my mom and I decided to make a Valentine treat for our teachers. This is our second year making some kind of sweet for our teachers at Kenwood. The recipe we used was nice because it was really easy to make. The recipe was from a cookbook named Chocolate on the Brain. The pictures on the front page are some of the many I took of the making and after stage. I will list the recipe below. We had to double the recipe because we wanted to make enough fudge for nine teachers. We were able to make good sized pieces which lead us to cutting 50 squares of delicious fudge..

  • Butter for greasing
  • 24 squares (24 ounces) of bittersweet or semisweet chocolate
  • 1 pint of chocolate ice cream
  • 1/2 cup chopped walnuts (optional)
1. Line an 8- or 9 inch square pan with aluminum foil, making sure that two ends of the foil overhangs the pan by about 2 inches so you can easily lift the fudge out of the pan later.
2. Lightly rub the bottom and sides of the foil with butter and set aside.
3. Melt the chocolate in a heavy frying pan over very low heat, stirring constantly. When the chocolate is almost melted, turn off the heat and stir in the ice cream. When it has melted, add the nuts, if using, and stir until combined.
4. Pour the fudge into the prepared pan, smoothing it into the corners with the back of the spoon. Refrigerate until firm, about one hour
5. Carefully lift the ends of the foil and remove the fudge from the pan. Peel off and discard the foil. Place the fudge on a cutting board and using a large knife, cut it into 50 pieces. Store at room temperature in a closed container or wrapped in foil or plastic.
